Speciality Bread Recipes

Very Very Banana Bread
(Serves 12 to 16) (Makes 2 loaves)

 

Ingredients:​

 

2 Cups All-Purpose Flour

1 1/2 Teaspoons Baking Powder

1/2 Teaspoon Baking Soda

1/2 Teaspoon Ground Cinnamon

1/4 Teaspoon Nutmet

1/4 Teaspoon All-Spice (optional)

1/4 Teaspoon Salt

2 Eggs

3 Cups Mashed Bananas (about 6 to 8 large)

1 Cup Sugar

1/2 Cup Butter, softened

1 Teaspoon Vanilla (optional)

1/2 Cup Walnuts (optional)

Streusel-Nut Topping (optional, see below for recipe)

 

Preheat oven to 350 degrees.  Grease two (2) 9x5x3 inch loaf pans.; set aside.

 

In medium bowl, sift together all dry ingredients; set aside.

 

In large bowl, mix together eggs, butter and sugar until light and fluffy.  Slowly add flour mixture.  Mix until moistened.  Add bananas and mix well.  Add walnuts (if using).

 

Divide equally between both loaf pans.  If using Streusel Topping add on top of batter.

 

Bake individually (this will ensure even cooking) at 350 degrees for 50 to 60 minutes or until toothpick inserted comes out clean.

 

Cool on wire rack for 10 minutes.  Use a butter knife to go around edges (this will help ensure that the bread removes easily and keep it from breaking.

 

Cool completely on wire rack.  About 45 to 60 minutes.

 

Wrap with plastic wrap to keep freshness of bread.

 

 

Streusel - Nut Topping
(Tops 2 9x5 Loaf Pans)
 

Ingredient:

 

1/4 Cup Packed Brown Sugar

3 Tablespoons Flour

2 Tablespoons Cold Butter

1/2 Teaspoon Ground Cinnamon (optional)

1/4 Teaspoon Nutmeg (optional)

1/3 Cup Finely Chopped Walnuts

 

Using a pastry blender, cut in butter until mixture resembles coarse crumber.  Stir in walnuts.

 

Top on batter (if using) before baking.
