Cake Recipes

Spiced Cake with Chocolate Frosting
(Serves 12)

 

Ingredients:​

 

1/2 Cup Butter, softened

2 Eggs

2 Cups All-Purpose Flour

1 1/2 Teaspoons Baking Powder

1 1/2 Teaspoons Ground Cinnamon

1/2 Teaspoon Baking Soda

1/2 Teaspoon Ground Nutmeg

1/4 Teaspoon All-Spice

1/4 Teaspoon Salt

1/4 Teaspoon Ground Ginger

1/4 Teaspoon Ground Cloves (optional)

1 1/2 Cups Sugar

1 Teaspoon Vanilla

1 1/4 Cup Buttermilk

 

Preheat oven to 350 degrees.  Grease and lightly flour a 9x13 baking dish.

 

In medium bowl, sift together flour, baking powder and soda, salt, cinnamon, nutmeg, all-spice, ginger, and cloves (if using) and set aside.

 

In large bowl, mix together eggs and butter until creamy and frothy.  Add sugar.  Mix well.  Add vanilla.  Slowly add the dry ingredients, mixing well; batter may be a little lumpy but that is ok.  Add the buttermilk and mix well.

 

Pour batter into prepare baking dish.  Bake at 350 degrees for 25 to 30 minutes or until toothpick inserted comes out clean.

 

Place on wire rack.  Using butter knife scrap along all sides of the baking dish.  Cool in pan for 10 minutes.  Flip onto cooling rack and cool completely; about 45 to 60 minutes.

 

Meanwhile, prepare frosting recipes (see box below).

 

 

Chocolate Frosting
(Frost one 9x 13 ckae)
 

Ingredient:

 

1 (12 ounce package) (2 Cups) semi-sweet chocolate chips

1/2 Butter

1 (8 ounce container) Sour Cream

1 Teaspoon Vanilla or Rum (optional)

3 1/2 to 4 Cups Powdered Sugar (about 1 pound bag)

 

In large saucepan, over low heat; melt butter and chocolate chips, stirring frequently.  When completely melted.  Remove from heat and cool 5 minutes.  Stir in sour cream and vanilla/rum (if using).  Gradually add powdered sugar a little at a time, beating until smooth.  Allow to cool slightly for a thicker style frosting.  Select piping tip.  Place frosting in piping bag and decorate as desired.
